Christmas Cookies

While Christmas songs play and the smell of balsam needles fill your homes, here are some delicious Christmas cookies from our chef Sarah for the holiday season! These make a great gifts, treats to bring to all of your Christmas parties or just some sweet snacks to add to your christmas repertoire!

Chocolate Cranberry Italian Cookies

10 oz Semisweet Chocolate
2/3 Cups butter
3/4 Flour
1/2 tsp baking powder
1/8 tsp salt
3 eggs
3/4 Cup sugar
2 tsp vanilla
1 1/2 Cups Dried cranberries

1) Melt together butter and chocolate
2) Mix together flour, baking powder and salt
3) Beat eggs and sugar until pale and thick
4) Add Vanilla to egg and sugar mixture
5) Mix ingredients together
6) Add cranberries
7) Spoon a heaping TBSP on to a tray
8) Bake at 325 for 12 minutes or until tops are cracked and shiny.

Pineapple Coconut Cookies

14 oz crushed pineapple, drain and squeeze
3 Cups flour
1/2 tsp baking soda
1/2 tsp salt
1 cup softened butter
3/4 cup brown sugar
1/4 cup white sugar
1 egg
2 tsp vanilla
1 lime (zest only)
1 1/2 cups sweet shredded coconut

1) Combine flour, baking soda and salt.
2) Beat butter and brown sugar until smooth, then add white sugar, egg and vanilla.
3) Slowly beat lime zest into mixture
4) Stir in one cup of coconut. Roll dough into logs and roll in the left over coconut, then refrigerate for one hour or over night
5) Slice into 1 cm sizes and bake at 325 for approximately 20 minutes or until bottoms are light brown.

Last Minute Christmas Shopping Ideas

Sometimes you’ve got people on your list that are just really difficult to buy for, or perhaps you’re just a terrible procrastinator like myself and do your Christmas shopping in the last few days before Christmas day. If either of these rings true for you, here are some last minute ideas that anyone on your list is sure to love!

2014 Ladies Soiree Christmas Recipes

Asian Short Ribs

Marinade:
2 lbs of beef shortribs
1 Tbsp sesame oil
Zest and Juice of 1 lime
1 Tbsp fresh ginger
2 Tbsp cilantro
½ tsp sambal olek

Combine all ingredients and let marinate for a minimum of 2 hours, but preferably overnight.

Braising:
Dry beef shortribs and season with salt and pepper. In hot pan with hot oil, give ribs a hard sear, take out of pan.
In hot pan sautee ½ small onion medium dice, ½ cup medium diced celery and 4 cloves of garlic.
Deglaze pan with 1/3 cup soy sauce, 1/3 cup mirin, ½ Tbsp sambal olek.
Return ribs to pot, add left over marinade, 1 ½ cups stock, ½ cup hoisin, 2 Tbsp brown sugar.
Bring to simmer and add your aromatics, 1 tsp scheshwan peppercorns, 1 star anise, ½ cinnamon stick, 1 kaffir lime leaf.
Finish in oven for 3-4 hours at 350 degrees. Let rest ½ hour. (If this is done in advance, cool completely in sauce, refridgerate and rewarm to serve.)

Serve with pasta, mashed potatoes or couscous.

Cranberry and Brie French Toast

For egg mixture
2 eggs
¼ cup cream
2 Tbsp vanilla
1 tsp cinnamon
Pinch cloves.
Mix ingredients until smooth.
Thoroughly soak thick sliced white bread in egg mixture, Fry in hot well buttered frying pan until nicely browned turn over and place pan in oven at 350 until it bread starts to soufflé, approx. 10 min.

Coulis:
1 cup cranberries
1 sprig of thyme
2 Tbsp white wine
¼ cup apple juice
2 Tbsp honey
1 star anise broken into two halves, one larger and one smaller
1 tsp ginger sliced
½ lemon zest and juice of

Bring ingredients to a boil and let sit 5 min. Remove large piece of anise leaving smaller piece and thyme leaves. Blend in blender and strain.

Spiced Walnuts:
1 cups nuts
1/2 tsp cinnamon
½ tsp orange zest
3 Tbsp sugar
Splash water
Pinch of salt
3 Tbsp

In large fry pan place nuts, water, sugar, salt, cinnamon and orange zest. Thoroughly coat nuts, put pan on stove on high heat and heat until sugar starts to caramelize. Then toss remaining sugar on nuts, coat well and put in oven at 350 bake until golden. Remove from oven and let cool.

To assemble
Place thinly sliced brie cheese ontop of baked French toast while coming out of oven let melt. Meanwhile on serving plate spread a thin layer of coulis. Place French toast on top, top with whipped creams and spiced walnuts. Serve.
